I love this recipe from the book, The Keto Beginning by Leanne Vogel of Healthfulpursuit.com for when I feel like a lighter, dairy free bulletproof coffee. It is part of the 30 Day Meal plan in the book which is a great, easy plan to follow.
Dairy Free Bulletproof Coffee
Blitz the following in a high speed blender or with a hand-held blender:
2 cups brewed coffee
1 tbsp MCT oil (start with 1 tsp) – I love using Brain Octane for its high quality and easy digestibility
1/3 cup coconut milk, unsweetened
1/4 tsp vanilla powder
2 drops liquid stevia (stevia glycerite)
Blend for 1 minute on high speed.
Pour and drink hot!
Per serving: 150 Calories; 15.5g Fat; 0.3g Protein; 1.9g Total Carbohydrate; 0.8g Fiber; 1.1g Net Carbs
