Kids love being able to choose what they want to put in their chicken taco as it makes them feel in control! Who doesn’t love that? It works for me too, as I can enjoy my chicken taco in a crispy lettuce wrap while the rest of my family have regular wheat tortillas.
It makes it super easy to cater to the carb-eaters and no one feels hard done by.

What if you want to serve your taco in a tortilla?
You can enjoy this chili lime chicken recipe with low-carb tortillas too.
They are a great low-carb option to use instead of the regular high carb version. You just need to check the net carbs on the packet you buy, as they vary a lot.
If you are tracking your macros and keeping to a strict 20g of net carbs per day, you may want to skip the low-carb tortillas.

Step by step guide: how to make Chicken Tacos
- First, heat your grill to 400°F (200°C) and make the chili-lime marinade. Place the olive oil, spices and 2 tablespoons of the lime juice into a bowl (reserving the rest of the lime juice for the sour cream dressing). Mix the marinade, then add the chicken tenderloins and coat well. [Image 1]
- Place chicken onto your grill (or grill pan on stove-top) and cook until internal temperature is 165°F (75°C), turning once after a few minutes. [image 2]
- As the chicken cooks or beforehand if time permits, prepare the salsa by chopping up the avocado and slicing the grape tomatoes into halves or quarters. Chop the cilantro roughly and cut the jalapeño in half and scoop out the seeds with a spoon. [image 3]
- Place the avocado, tomatoes, diced jalapeño, 2 tablespoons of cilantro (leaving the rest for the sour cream dressing) and 1 tablespoon of lime juice into a bowl and toss. [image 4]
- Into a blender or mini food processor, place the sour cream, remaining cilantro (2 tbsp) and lime juice (1 tbsp). Blend on high until smooth and creamy. [image 5]
- Remove cooked chicken from grill/barbecue or grill pan and serve with lettuce wraps or low-carb tortillas, avocado salsa and sour cream dressing [image 6]
Cooking Tips & Tricks for Grilled Chili Lime Chicken Tacos
- Too Spicy? Skip the chili or add less to reduce the spiciness, especially if cooking for kids (or add more for a bigger kick)
- Cook on the stove? Grilled chicken tacos can be cooked on a grill pan on the stove top instead of on a grill or BBQ. Cook for 3-4 minutes per side on medium-high heat.
- No jalapeño pepper? Instead of using a jalapeño pepper, bottled jalapeños can be used. Substitute 1/4 cup of bottled jalapeño for 1 chili.
- For the taco – use a nice large lettuce leaf such as romaine (Cos) or iceberg to place the filling into
- Try low-carb tortillas for a more filling option but watch the carb counts as some are higher than others. A good choice is Mama Lupe which has 3g net carbs per tortilla. Scroll down for more low-carb tortilla brands to try. Note that these tortillas are not gluten-free. Try Siete Almond Flour Tortilla for a gluten-free, grain-free option.
- Warm up the tortilla? If using low-carb tortillas, they can be heated in a dry hot pan for a minute or so per side.
CAN YOU FREEZE CHICKEN TACOS?
You can freeze the cooked chicken but not the avocado salsa or the sour cream dressing. These are best made fresh. Another alternative is to marinate the chicken for an hour or so and then freeze the chicken ready to grill another night.
IS IT SAFE TO REFREEZE RAW CHICKEN?
It was previously thought that it was unsafe to refreeze raw meat that had been frozen previously, but this has apparently been debunked according to the U. S. Dept. of Agriculture (USDA).
Be sure to defrost meat in a fridge at 5° or below. If re-freezing, the food may lose quality due to moisture loss during thawing.
CAN CHICKEN TACOS BE MADE IN A CROCKPOT (SLOW-COOKER) OR INSTANT POT?
Yes – chicken tacos can be made in many different ways.

Cindy
Made this recipe in it’s original form tonight for 5 adults including 2 yo’s on keto that eat A LOT (doubled to 8 servings), grilled the chicken on a Green Mountain smoke. Probably the best grilled chicken taco recipe I’ve come across, and I’ve tried many. We doubled the recipe, and will go to 12 or 24 servings next time to have more leftovers for lunches. We used low-carb tortillas instead of lettuce wraps. My 80yo mother–who doesn’t like anything with tomatoes or avocados (or generally scrunches her knows at anything “taco”)–ate her entire serving. Next time will increase the jalapeno in the pico blend. All in all, a fantastic recipe. I normally don’t leave reviews, but wanted to call out how good this was for anyone who hasn’t tried it. I would encourage anyone to make the recipe in it’s original state before altering anything. Cheers!

Hey Cindy, thanks so much for commenting and letting us know how well this recipe worked for you and your family!! We love to hear success stories and especially how people like to tweak the recipes. It often gives us new ideas to try. Super glad to hear that your non-taco eating mother enjoyed it too. That’s always a win 😉
Monica
Is the serving size 1 lettuce taco?
Abbie Brooks
The recipe in total serves 4. Depending on how big your lettuce leaves are, you may be able to make one or more tacos using a quarter of the mixture and this would be 1 serving as shown in the nutritional info. Hope that helps,
Bill
Where do the 7 net carbs come from? The tomatoes?
Abbie Brooks
The carbs come from a little bit of everything! Per serve, a rough breakdown of the net carbs:
-Romaine lettuce 1.75g
-Avocado 1.25g
-Tomatoes 1g
-Lime juice 1.25g
-Sour cream, just under 1g
-Spices, just under 1g

These look so tasty! I also love the idea of being able to cater to both your own and your families food needs in one dish!
