Forget Chinese take-out! If you love our 30-minute keto weeknight meals, then this easy Asian style, lo mein recipe is guaranteed to be a new favorite!
This recipe is not just high on flavor but it’s is super versatile as you could serve it with zucchini noodles (zoodles) or other low-carb vegetables such as broccoli or cabbage. Another great option is to serve the crispy pork with shirataki noodles (otherwise known as konjac noodles) or even cauliflower rice!
And if you’re cooking for your family or partner/room-mate who likes their carbs, then some regular rice is an easy accompaniment that keeps complaints to a minimum!

WHAT ARE SHIRATAKI NOODLES?
Shirataki noodles are made from a fiber called glucomannan that is found in the root of the konjac plant. These noodles are gluten-free, low in carbohydrates and calories, making them a good noodle substitute for people who are gluten intolerant or following a low-carbohydrate or ketogenic diet. They also come in rice and pasta shapes like spaghetti or fettucini so can be used to replace rice or pasta in recipes. To prepare shirataki noodles, boil the rinsed noodles for 2-3 minutes then toss in a dry, heated pan for a minute or two to remove excess moisture before serving.
Recommended brands are Miracle Noodles (USA), Slendier (UK, Australia – where to buy in Oz). There are more and more brands making shirataki noodles now so google search to find a local vendor.

Cooking Tips & Tricks for Keto Pork Lo Mein with Zoodles
- Skillet size? You’ll need to use a large 12 inch (30cm) skillet to make this recipe all in one pan. Remove the pork if needed to make room for the zoodles.
- No spiralizer? Slice zucchini into thin half moons or matchsticks instead. Or use a vegetable peeler to create zoodles. Watch the video above to see how I make zucchini noodles with an affordable spiralizer in less than 2 minutes. I use this spiralizer and also this one from So Nourished.
- Don’t like zucchini noodles? Try shirataki or konjac noodles as a substitute such as Miracle Noodles. Or finely slice some broccoli or cabbage and saute in the pan instead of the zucchini noodles.

- Don’t eat pork? Substitute chicken, beef or shrimp for the pork
- What to serve the carb eaters? This dish is very easy to tailor to your carb eating family. Cook some rice for them or serve with any type of noodles.
- Make ahead? Spiralize the zucchini, slice the pork and make the sauce the day before and store in the fridge in separate air-tight containers
- Like it spicy? Add more chili garlic sauce
- Serving young children? Set aside some cooked pork for them before you add the sauce
- Sriracha sauce can be used as a substitute for the chili garlic sauce as they are similar
How to make Keto Pork Lo Mein with Zoodles
Start by preparing the boneless pork loin. Not sure which cut of pork this is? Here is a guide to pork cuts.
Cut the pork into bite-sized pieces
Add olive oil to a large skillet over medium heat and add pork when oil is hot
While the pork is cooking, make the sauce. Add peanut butter, tamari (soy sauce if not gluten-free), chili garlic sauce, sesame oil and vinegar to a blender (a mini blender is perfect for this).
Pulse for a few seconds until smooth.
Now cut the ends of the zucchini and spiralize into noodles (see video above to see a simple spiralizer in action)
When pork is browned on both sides and almost cooked through (8-10 minutes), push it to the side of the skillet and add zoodles.
Allow the zucchini noodles and pork to saute for 2-3 minutes as zucchini softens. Add the sauce and stir until heated through.
Serve garnished with sesame seeds.

Crispy KETO Pork Lo Mein with Zoodles
Ingredients
- 2 pounds boneless pork loin chops
- 2 tablespoons extra virgin olive oil
- 1/3 cup natural creamy peanut butter (100% natural)
- 1/3 cup tamari sauce or coconut aminos (or soy sauce if not gluten-free)
- 0.5 teaspoon chili garlic sauce (Sriracha sauce is fine)
- 1 tablespoons sesame oil
- 1 tablespoons rice vinegar (sugar-free)
- 2 pounds zucchini about 4 large zucchini
Instructions
- Cut pork into bite sized pieces
- Heat large skillet over medium high heat and add olive oil
- Once olive oil is hot add pork pieces
- While pork begins to cook combine peanut butter, soy sauce, chili garlic sauce, sesame oil and vinegar in blender and pulse for several seconds until smooth
- Remove ends from zucchini and spiralize into noodles
- Once pork has started to brown on both sides and is mostly cooked (about 8-10 minutes), push to one side of skillet and add spiralized zucchini
- Let saute for 2-3 minutes more until zucchini begins to soften then add desired amount of sauce and stir together until heated through
- Garnish with sesame seeds if desired
