They’re also an easy but impressive looking dessert of sorts to serve guests at a summer barbecue, party or dinner party. Using candy moulds with fun shapes is a simple way to make these keto diet ice creams look a little fancy. Otherwise, you can use an ice-cube tray or mini muffin pan.

HOW TO GET YOUR KIDS TO HELP MAKE KETO ICE CREAM BITES
This sugar-free ice cream recipe is awesome if you want to get your kids to help in the kitchen. Kids can help prepare the strawberries and put everything into the food processor as well as spoon the mixture into the moulds. Obviously, be careful with the food processor and supervise kids closely. I’ve had at least one near finger removal when my kid turned on the processor while I was scraping down the sides! The blades are sharp – trust me!
I use this super fun cool gadget to remove the stalks from the strawberries easily and without losing half the strawberry and my kids love using it too.

CAN I HAVE ICE CREAM ON A KETO DIET?
Regular ice-cream is high in sugar and carbohydrates so is not suitable for a keto or ketogenic diet. A single serving of vanilla ice-cream (2/3 cup) contains 28g of total and net carbs (there is no fiber in ice cream). One single serving of ice cream would amount to more than the recommended daily allowance of carbohydrates for a typical ketogenic diet. There are, however, many options for keto-friendly ice-creams including both home-made recipes and store-bought options.
IS THERE A KETO-FRIENDLY ICE-CREAM BRAND?
There are now several keto ice-cream brands on the market. The best keto-friendly ice-cream brand is Rebel Creamery. This brand is sweetened with erythritol and monk fruit which are both ketogenic, sugar-free sweeteners. Their vanilla flavor has 1.3g of net carbs per half-cup serving, 150 calories, 14g fat, 2g protein. When looking for a keto-approved, low-carb & high-fat brand, look for keto ingredients such as erythritol, stevia or monk fruit and cream rather than milk. Some brands that are low-carb are actually also low in fat so read nutrition labels carefully.
Cooking Tips & Tricks for Making Ketogenic Ice-Cream Bites
- Allow thawing for 10-15 minutes before serving so they are not rock hard. In summer, they might only need a few minutes to thaw a little after you remove them from the freezer.
- Not sweet enough? Add more low-carb sweetener to taste after processing the mixture and before adding the chocolate chips
- Low-carb sweeteners including stevia/erythritol blends such as Swerve or erythritol/monk fruit blends
- Store ice cream bites? Store in the freezer in an airtight container for 2-3 months
- Taking keto-icecream to a party? Store in an airtight container and take them in a cooler bag with ice-bricks. Once at the party, store them in the freezer until ready to serve
- Entertaining? These are great for entertaining as you can make them in fun shapes, using a candy mould as I have. These keto ice-cream bites will start to melt once out of the freezer (as with any ice-cream) but don’t worry, they will be gobbled up in no time!!
- Don’t have candy moulds? You could also use ice-cube trays or a mini-muffin or mini-cupcake sized tray. Use liners if your tray is not silcone.
- No silicone moulds? If using metal mini-muffin trays or another non-silicone circular-shaped mould, you’ll want to use liners to prevent the ice cream bites sticking.
- Can’t get sugar-free chocolate chips? Use 90% cocoa dark chocolate and chop into small chunks or cocoa nibs.
How to make Ketogenic Chocolate Strawberry Ice-Cream Bites
Place the strawberries, shredded coconut, a keto-friendly sweetener such as erythritol and a pinch of salt in a food processor. I used a mini-food processor. Break up the cream cheese into smaller pieces and add to the food processor
Now fire it up and blend at high speed until combined. You will need to scrape down the sides and process again to ensure everything is mixed thoroughly. This will take around 1 minute.
Mix in the sugar-free chocolate chips (I used Lilys)
Grab your silicone moulds and spoon the mixture into the moulds. I used candy moulds but you could also use ice-cube trays or mini-muffin sized moulds.
Place in the freezer to set. This keto ice-cream recipe will take about 1.5 hours to fully set.

Ketogenic Chocolate Strawberry Ice-Cream Bites
Ingredients
- 2/3 cup strawberries stalks removed
- 1/2 cup shredded coconut
- 2 tbsp granular erythritol sweetener
- Pinch of salt
- 1.8 oz cream cheese
- 1/4 cup sugar free chocolate chips I used Lilys
Instructions
- Place the strawberries, shredded coconut, sweetener (erythritol) and a pinch of salt into a food processor.
- Break or slice the cream cheese into small pieces and add to the food processor.
- Process on high speed until well combined, scrape down the sides and process again.
- Stir through the choc chips.
- Spoon the mixture into silicone moulds.
- Place in the freezer to set for 1 to 1.5 hours
