One thing that really surprised me about mug cakes is that the texture and taste is actually like real cake!
I’ll be the first to admit that many low-carb versions of foods, especially baked goods are not always as good as the original version. But I was thrilled to discover that a good mug cake recipe is just as tasty as the high-carb, high sugar version.
They are the perfect way to make yourself a cheeky dessert for one or a low-carb snack. This recipe is sugar-free and gluten-free. Leave out the cream to make it dairy-free.
Why I love keto mug cakes
A keto mug cake can be thrown together in no time, and they rarely take more than 5 minutes to make.
Generally, a good low-carb mug cake uses ingredients that you probably already have in your pantry, such as spices, coconut flour, and baking powder.
Make this mug cake your own with more or less pumpkin spice and your preferred amount of sweetener.
When you follow a ketogenic diet, it’s a lifesaver to have a few quick recipes at the ready. My favorites are keto mug cakes and chia pudding recipes.

How to make Keto Pumpkin Spice Mug Cake
- Place the butter into a microwave safe mug or ramekin that has at least a 1 cup capacity [image 1]
- Melt the butter in the microwave – this will take 25-30 seconds on high [image 2]
- Add all other ingredients (except the cream) to the melted butter and whisk together, ensuring that the egg yolk is broken up. If you don’t have pumpkin spice, substitute ½ tsp cinnamon, ¼ tsp ginger, ¼ tsp nutmeg and 1/8 tsp cloves. [images 3-7]
- Cook in the microwave for 50-60 seconds on high. The cake will cook and rise to the top of the mug. It should have the texture of a regular cake.
- Remove mug from microwave, being careful as it will be hot. Enjoy as is, add a tablespoon of heavy cream or takes things up a level with some keto whipped cream.
Cooking Tips & Tricks for Low-Carb Pumpkin Spice Mug Cake
- Leftover keto mug cake? Not likely, but the cake can be kept covered at room temperature for a couple of days or in the fridge for 3-5 days.
- Cook it in the oven, not a microwave? Bake for 15-20 minutes at 350°F (180°c) in an oven-safe ramekin, until a skewer comes out clean
- Don’t have pumpkin spice? Make your own using ½ tsp cinnamon, ¼ tsp ginger, ¼ tsp nutmeg and 1/8 tsp cloves or try 1 tsp of cinnamon
- Dairy free? Leave out the cream
- Nut-free? Use golden flax meal instead of almond meal
- Too sweet or not sweet enough? Add more or less low-carb sweetener to suit your taste. Feel free to use your preferred keto friendly sweeteners such as granular erythritol, powdered erythritol or erythritol monk fruit blend. If using stevia, be sure to mix the sweetener through very well.
- Make ahead tip (meal prep) Make up the batter for several keto mug cakes at one time and cover with cling film without cooking them. Store in the fridge for up to 3 days and cook for 60-70 seconds in the microwave when needed for a healthy dessert or a snack.
WHAT SPICES ARE IN PUMPKIN SPICE?
Pumpkin spice consists of ground cinnamon, ginger, nutmeg and cloves. A typical ratio is ½ tsp cinnamon, ¼ tsp ginger, ¼ tsp nutmeg and 1/8 tsp cloves.
HOW DO YOU MAKE HOMEMADE PUMPKIN SPICE
To make up a batch of pumpkin spice at home, mix the following in a small bowl:
- 4 tablespoons cinnamon
- 2 tablespoons ground ginger
- 2 tablespoons nutmeg
- 1 tablespoon cloves

- 2 tbsp butter

- 1/4 tsp baking powder
- 2 tsp granular monk fruit erythritol or low carb sweetener of choice
- 2 tsp pumpkin spice see recipe notes for substitutes
- 1 egg
- 1 tbsp heavy cream
Instructions

This is SO fantastic. I was so tempted to get a PSL while out today but thought for sure I could make something at home and was so thankful to find something that didn’t require pumpkin purée!
I did make a few mods to the cake the second time around, which yielded a better crumb and flavour, IMO. I upped the baking powder to 1/2 tsp, added a splash of vanilla and a pinch of salt. I cooked it for 90 seconds. It was PERFECT! I highly recommend trying those mods (not necessarily the time – it varies so much depending on the microwave)

Is this really 7 net carbs? Seems like it should be a lot less…

I recalculated the macros using MtFitness Pal and came out with 5.2 net carbs. The carbs are mostly coming from coconut flour, almond flour and the pumpkin spice. To reduce the carbs a little, you could halve the pumpkin spice quantity. Nutrition for the recipes on this blog are calculated using Spoonacular, a very common nutrition API used on many popular recipe blogs. I have found that the macro counts can vary quite a lot depending on which method or app you use. This can be frustrating and the best thing I find to do is use one method or app consistently.

I know exactly what you mean about egg consistency. I avoid a lot of low-carb bread recipes because they have a strong egg taste which I don’t like either. In my opinion, this mug cake recipe has no eggy flavor at all. The texture is cakelike and pumpkin spice is the main flavor. I’m sure you’ll love it! Let me know what you think…
