Heat large skillet over medium high heat and add olive oil
Once olive oil is hot add pork pieces
While pork begins to cook combine peanut butter, soy sauce, chili garlic sauce, sesame oil and vinegar in blender and pulse for several seconds until smooth
Remove ends from zucchini and spiralize into noodles
Once pork has started to brown on both sides and is mostly cooked (about 8-10 minutes), push to one side of skillet and add spiralized zucchini
Let saute for 2-3 minutes more until zucchini begins to soften then add desired amount of sauce and stir together until heated through
Garnish with sesame seeds if desired

1. If you don’t have a spiralizer, you can slice zucchini into thin half moons or matchsticks instead2. Add more chili garlic sauce if you like a little spice3. You want to use a large 12 inch (30cm) skillet to ensure you can make this all in one pan (remove pork if needed to make room for noodles)4. Don't like zucchini noodles?
