Ingredients

  • 1 pound boneless skinless chicken tenderloins
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup lime juice (2 limes) divided
  • 1 tsp chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 large avocado
  • 1 cup grape tomatoes
  • 1 small jalapeño pepper seeded and diced
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream
  • 1 head romaine lettuce (Cos) or low-carb tortillas

Instructions

  • Preheat grill to 400 F (200c)
  • Toss chicken with olive oil, 2 tablespoons of lime juice and seasonings until well coated
  • Place chicken on grill and cook until internal temperature reaches 165 degrees F (75 C), flipping once
  • While chicken cooks cut avocado into chunks and slice tomatoes in half or quarters
  • Toss tomatoes, avocado and diced jalapeño with 1 tablespoon lime juice and 2 tablespoons of chopped cilantro
  • Add sour cream, remaining cilantro and remaining 1 tablespoon lime juice to a blender and blend on high until smooth
  • Remove chicken from grill and allow to cool slightly and dice
  • Serve on lettuce wraps or low-carb tortillas with salsa and sour cream dressing

Notes

1. If you like a very mild flavor you may cut chili powder in half or eliminate altogether.
