Ingredients

Instructions

  • Heat olive oil in skillet over medium high heat
  • Add shrimp and cook for 3 minutes
  • Add garlic and stir and continue to cook for about 3-4 minutes until shrimp cooked through
  • Add olive, tomatoes and seasoning and heat through
  • Cook shirataki noodles according to package directions (microwave for 1 minute or boil for 2-3 minutes) and drain well and then heat the noodles in a dry skillet for 1-2 minutes to remove excess moisture
  • Serve noodles topped with sauce

Notes

  • Leftovers sauce or shrimp? Leftover shrimp can be kept in the fridge for 1-2 days only. The sauce on its own will keep for 3-5 days in an airtight container.
  • Leftover shirataki noodles? Use within 3 days after opening the packet, ensuring the noodles are covered in the original liquid or add enough water to cover.
  • Can you freeze shirataki noodles? No, shirataki noodles should not be frozen whether still in the packet or after cooking.
  • Save time? Use jarred minced garlic and you won't need to chop anything
  • What to serve the carb-eaters? Cook some spaghetti for the carb eaters.
  • Substitute for shirataki noodles? This dish would be delicious served with zucchini noodles (zoodles) if you're not a fan of shirataki noodles
  • Want more flavor? Add 6 chopped anchovy fillets and 2 tbsp small capers with the olives for an even more authentic taste.
