Ingredients

  • 2 eggs
  • 2 tbsp heavy cream
  • 1/4 cup shredded parmesan cheese or other hard cheese
  • 1/2 cup baby spinach chopped roughly
  • Olive oil spray
  • Salt and pepper

Instructions

  • Take a 400ml (1 ¾ cup) capacity mason jar or regular jar with a wide mouth and coat the insides with olive oil spray.
  • Crack in the eggs and season with salt and pepper.
  • Add the cream, cheese and spinach.
  • Seal the top of the jar with plastic wrap and screw the lid on.
  • Give it a good shake so that the eggs are beaten and the ingredients are well combined.
  • Remove the lid and leave the plastic wrap on, then microwave the jar on high for around 1 minute.
  • Use a fork to mix the eggs a little so that they cook evenly.
  • Microwave again for 50-55 seconds depending on your microwave.
  • Once the eggs are cooked, you can eat immediately or place the lid back on and eat later.

Notes

Note - add another egg to make the meal more substantial but be sure to use a larger mason jar. Half an avocado also makes a great addition for extra fat and fiber.
