Ingredients

  • Cut pork into bite sized pieces
  • Heat large skillet over medium high heat and add olive oil
  • Once olive oil is hot add pork pieces
  • While pork begins to cook combine peanut butter, soy sauce, chili garlic sauce, sesame oil and vinegar in blender and pulse for several seconds until smooth
  • Remove ends from zucchini and spiralize into noodles
  • Once pork has started to brown on both sides and is mostly cooked (about 8-10 minutes), push to one side of skillet and add spiralized zucchini
  • Let saute for 2-3 minutes more until zucchini begins to soften then add desired amount of sauce and stir together until heated through
  • Garnish with sesame seeds if desired

Notes

1. If you don’t have a spiralizer, you can slice zucchini into thin half moons or matchsticks instead
2. Add more chili garlic sauce if you like a little spice
3. You want to use a large 12 inch (30cm) skillet to ensure you can make this all in one pan (remove pork if needed to make room for noodles)
4. Don't like zucchini noodles? Try shirataki or konjac noodles as a substitute such as Miracle Noodles. Or finely slice some broccoli or cabbage and saute in the pan instead of the zucchini noodles.
5. Prefer rice to zoodles? Pork Lo Mein works well with cauliflower rice too!
6. What to serve the carb eaters? This dish is very easy to tailor to your carb eating family. Cook some rice for them or serve with any type of noodles.
7. Make ahead? Spiralize the zucchini, slice the pork and make the sauce the day before and store in the fridge in separate air-tight containers.
