Feeding your family while on a keto diet can be a challenge. I’ve been experimenting over the years with how to make this work and had many successes but also many failures!
Actually, the trigger for starting the Appetite For Energy website was that I had just had enough with the hours I was spending in the kitchen trying to cook healthy keto meals for myself and non-keto dinners for my carb-loving family.
After finishing the post-dinner cleanup at 9.30pm one night, I had a big meltdown. I literally threw in the towel and vowed that I would only cook 30-minute recipes from now on! It was a bit dramatic but it really was a turning point in my life.
I am really lazy when it comes to cooking and to be perfectly honest, I would be beside myself with happiness if a personal chef turned up at my house every night. I’m driven though, by my motivation to be healthy for my kids and family and that means cooking REAL FOOD myself….damn!!!
Hence the Appetite For Energy ethos of simple, low-carb food in 30 minutes!
But there are lots of other ways to get dinner on the table with the least amount of effort and stay on track with our keto diets.
I also do some meal prepping on weekends and I give my slow-cooker a pretty good workout most weeks.
This allows me to make a large quantity of protein that I can use as a meal for my family (and me) and have enough leftover to use during the week for my dinners or lunches. An instant pot works well for this too.
There are also lots of keto-friendly recipes too that the kids will happily eat without realizing that it’s even low carb. These types of recipes are awesome because you’re GENUINELY only cooking one meal and that means no extra sides of rice or pasta. Wohoo!
