CAN I COOK GRILLED STUFFED CHICKEN IN THE OVEN?
Yes, stuffed chicken can easily be baked in the oven. Place the stuffed chicken in a baking dish, uncovered and bake at 375F (190c) for 25-30 minutes until chicken is cooked through. When using toothpicks to secure the filling inside the chicken, be sure to soak them for 20 minutes in water before using, to prevent burning.
Cooking Tips & Tricks for KETO Grilled Mushroom Stuffed Chicken Breast
- Undercooked chicken? Use a meat thermometer to check that chicken is cooked to an internal temperature 165F (74c)
- Having trouble stuffing the chicken? Use your fingers instead of a spoon to stuff the chicken
- Stuffing falling out of chicken? Use 2 toothpicks in a criss-cross pattern across the opening (see image below). When turning the chicken, be sure to flip carefully so none of the filling is lost
- How to cook stuffed chicken in the oven? Keto Mushroom Stuffed Chicken Breast can be cooked in the oven instead of grilled. Place the stuffed chicken in a baking dish, uncovered and bake at 375F (190c) for 25-30 minutes until chicken is cooked through. How to make KETO Grilled Mushroom Stuffed Chicken Breast
Start by cutting a slit in the centre of each chicken breast. Be careful not to cut all the way through as you want to form a pocket inside for the stuffing.
Now, slice the mushrooms, shallots (or onion) and garlic as fine as possible. Mix the vegetables with the cheese.
Stuff the mixture into each chicken breast pocket then take a toothpick (or two) and use it to hold the pocket closed.
Using a toothpick to secure the chicken, prevents the filling from falling out during cooking.
Place on a pre-heated grill or in a large skillet on medium-heat and cook for 8-10 minutes or until each side is fully cooked through (to 165F, 74c).

Grilled Mushroom Stuffed Chicken Breast
Ingredients
- 4 chicken breasts approximately 1/3 lb (150g) each
- 2 oz mushrooms
- 2 oz gorgonzola cheese or other cheese
- 1 shallot
- 2 garlic cloves
- 1 teaspoon herb and garlic seasoning or Italian seasoning
- 1/2 teaspoon salt
- 2 tablespoons olive oil
Instructions
- Cut slit into center of chicken, being careful not to cut all the way through, in order to form a pocket
- Finely chop mushrooms, shallot and garlic and mix together with cheese
- Stuff by spoonfuls into chicken breasts and use a toothpick to hold shut so filling stays inside
- Place on preheated grill (or a skillet over medium-heat) and cook for 8-10 minutes on each side until fully cooked through (165F or 74c).
