15 Minute Low-Carb Rich Chocolate Mousse
Ingredients
- 2 avocados large
- 3 tbsp cacao powder unsweetened
- 1.5 tsp vanilla extract
- 1/2 cup coconut cream refrigerated overnight until thick if time permits
- 1/3 cup powdered erythritol sweetener
- 12 drops liquid stevia
- 1 pinch salt
- 6.5 oz bakers chocolate 85% cocoa and above or sugar free
Instructions
- Melt chocolate in the microwave by breaking up into smaller pieces and then microwave in short bursts of 20 secs on 75% power. Stir after each burst to ensure the chocolate doesn't burn.
- Place the flesh of the avocados into the bowl of a food processor or blender.
- Add cocao powder, vanilla extract, coconut cream, sweeteners (powdered & liquid), and salt to the bowl.
- Process for 15 seconds until well combined.
- Scrape down the sides of the bowl again and whiz again for 10 seconds or so.
- Add the melted chocolate to the other ingredients and process for 15-20 seconds.
- It should be smooth and have a rich, velvet like texture.
- Serve with a few raspberries and cream.
Notes
Alternatively, any leftovers can be frozen in small portions and turned into fat bombs!
